20 Minute Black Bean Soup, For One

I am ALWAYS looking for quick, healthy, recipes I can make for myself. I live in a really great area, but it's a little rural and very seasonal, so we don't always have a lot of options for take out year round. So, as a single person I need to be able to make a quick meal that hits all the notes of my foodie senses and satisfies my need for keeping it healthy!


I came up with this SUPER quick black bean soup out of necessity one afternoon while working from home -- It's easily a go-to pantry meal. Coming in at $.99/serving and just about $2.00 for the whole recipe... this one is a no-brainer for and under $5 meal!


1 can low-sodium organic Black Beans

1/2 can Rotel Tomatoes

1/4 cup water

1 tsp Dried Chopped Garlic

1 tsp Dried Chopped Onion

1 tsp Parsley

1tsp Curry Powder

1/2 tsp Cumin

1 Tbsp Olive Oil

Salt and Pepper to taste


Place olive oil, chopped garlic and onion in a medium sauce pan and heat on medium heat until fragrant. Drain and rinse black beans, add to pan with half can of Rotel tomatoes, water and remaining ingredients. Cook for 10 mins, stirring occasionally. Remove from heat. Using an immersion blender, gently blend half of your soup. Place back on the heat for 2 minutes and stir.


Serve with your favorite tortilla chips and / or salsa.


Makes two servings.
