I wanted to make a breakfast bread that was high in protein and packed with all the good stuff to sustain you through the day. This recipe is my first shot at just that! Try it out and tell me how yours comes out!
2 over - ripe bananas
1/3 cup Greek yogurt
1 tbsp maple syrup
1 tsp vanilla
1 cup Almond flour
2/3 cup vanilla vegan protein powder
1 Tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/4 cup (mix in) + 1 tsp Old fashion oats (topping)
1 cup fresh blueberries
Beat bananas and eggs on medium until smooth. Add yogurt, vanilla and maple syrup, mix well.
Mix all dry ingredients in a separate large bowl and blend together with a whisk until well combined , reserving 1 tsp of oats for your topping.
Make a well in the center of your dry ingredient mix and pour your banana mixture in. Using a spoon or spatula, gently combine your dry ingredients from the outside into your wet ingredients until combined. Fold in your blueberries.
Pour mixture into a greased 8x8 pan (can use loaf pan — this is just what I used!) and sprinkle with oats topping.
Bake at 350 degrees, 20 mins or until toothpick in the center comes out clean.
